Something Special Zucchini

INGREDIENTS

2 md (4 small) zucchini, diagonally sliced
2 Tomatoes, sliced
2 lg Sweet white onion, thinly sliced
2 sm Green sweet peppers, sliced
12 Individually wrapped American Single sliced Cheese
2 tb Butter
Salt and Pepper

INSTRUCTIONS

In a buttered shallow 2 qt. baking dish, arrange half of the zucchini
around the sides and over bottom of dish. Add half of the onion, tomato,
pepper and 4 of the cheese slices. Sprinkle with salt and pepper. Dot with
half of the butter. Repeat the procedure. Dish will be very full. Cover
tightly with foil. Bake in a 375 degree oven 45 to 60 minutes or until
vegetables are tender. Cut 4 cheese slices diagonally in half. Remove dish
from oven. Uncover. Arrange sliced cheese over vegetables, in a row, down
the middle. Return to oven 2 minutes or just until cheese softens.
Note: You might spray the side of the foil that touches veggies with a
