Cut chicken into 8 pieces. Pour oil into heavy iron skillet. Heat over
moderately high heat. Season chicken with salt and pepper. Dredge the
chicken in flour and shake off excess flour. Place the chicken pieces,
skin-side down, in hot oil. Fry the chicken until golden brown on the
bottom. Turn the pieces with tongs and brown on the other side. Lower the
heat if necessary to avoid burning. Continue to cook the chicken turning
once or twice until cooked about 20 to 30 minutes depending on size of
chicken and temperature of oil. Remove chicken from pan and drain well on
paper towel. Serve hot or cold.
Yield: 4 servings.
