Southwest Tuna with Black Beans

INGREDIENTS

1 tb Vegetable oil
1 sm Onion; chopped, (1/4 cup)
1 Anaheim chili; chopped, or 1/4 cup canned chopped green chilies
1 Clove garlic; crushed
1 tb Grated lime peel
3 tb Lime juice
1 md Tomato; chopped, (3/4 cup)
2 cn (15 to 16 ounces each) black beans; rinsed and drained
2 cn (6 ounces each) white tuna in water; rinsed and drained

INSTRUCTIONS

Heat oil in 10-inch skillet over medium heat. Cook onion, chili and garlic
in oil about 2 minutes, stirring constantly, until onion is softened.Stir
in remaining ingredients. Cook about 5 minutes, stirring occasionally,
until hot.
