Spam And Black Beans With Rice

INGREDIENTS

1 c Long-grain rice, cooked
1 Spam luncheon meat -, 12
oz cubed
1/2 c Chopped onion
1/2 c Chopped green bell peppers
1 T Butter or margarine
1 Black beans -, 15 oz
drained
1 Cajun-style stewed tomatoes
1/2 t Cumin
1/8 t Cayenne pepper

INSTRUCTIONS

Cook rice according to package directions.  In large skillet, saute
Spam, onion and bell pepper in butter until  onion is softened and Spam
is lightly browned. Stir in beans,  tomatoes, cumin, and cayenne
pepper. Cook, stirring occasionally,  until beans are thoroughly
heated. Serve over the hot cooked rice.  This recipe yields 6 servings.
