Spam and Eggplant Tempura

INGREDIENTS

4 Eggplants; long ones
1 cn Spam
Oil; for frying
1 c Cornstarch
1 c Bisquick baking mix
1 ts Salt
1 c Water
1 Egg

INSTRUCTIONS

TEMPURA BATTER
Cut eggplant into 3" lengths. Slice each piece lengthwise, but not all the
through leaving the eggplant attached at the bottom. Salt *very*
generously. Place slices in colander and let juices drain from the
eggplant. After moisture has drained, rinse well; pat dry. Cut the Spam
into pieces about 1/4" thick and then cut each piece in half. Place a piece
of Spam in the eggplant and hold it together with a toothpick or two.
TEMPURA BATTER Beat the egg and water together and then add it to the dry
ingredients that have been combined together. Stir until well blended. Dip
each piece of eggplant and Spam into the batter and then deep fry at 365
degrees until each piece is golden brown. Serve with Ponzu-Joyu Sauce. Me
