Spambalaya ™ Jambalaya With Mahatma (r) Rice

INGREDIENTS

1 SPAM Lite Luncheon Meat
cubed 12 oz
1 c Chopped onion
2/3 c Chopped green bell pepper
1/2 c Chopped celery
2 Garlic cloves, minced
1 Cajun style or regular
stewed tomatoes 14.5 oz
1 Lower sodium chicken broth
10.75 oz
1/2 t Dried leaf thyme
8 Hot pepper sauce
2 Bay leaves
1 c MAHATMA Rice
2 T Chopped parsley

INSTRUCTIONS

In large non-stick skillet or 3-quart non-stick saucepan, sauce SPAM
Luncheon Meat, onion, green pepper, celery, and garlic until
vegetables are tender. Add tomatoes, chicken broth, thyme, hot pepper
sauce, and bay leaves. Bring to a boil; stir in MAHATMA rice. Cover.
Reduce heat and simmer 20 minutes or until rice is tender. Discard  bay
