INGREDIENTS

1 cn Spam Lite luncheon meat – (12 oz); cubed
1 c Chopped onion
2/3 c Chopped celery
2 Garlic cloves; minced
1 cn Cajun style or regular stewed tomatoes; (14 1/2 oz)
1 cn Lower-sodium chicken broth ; (10 3/4 oz)
1/2 ts Dried leaf thyme
6 dr Hot pepper sauce -; (to 8 drops)
1 c Carolina or River rice
2 tb Chopped parsley

INSTRUCTIONS

In lagre non-stick skillet or 3-quart non-stick saucepan, saute Spam,
onion, green pepper, celery, and garlic until vegetables are tender. Add
tomatoes, chicken broth, thyme, hot pepper sauce, and bay leaves. Bring to
a boil; stir in Carolina or River rice. Cover. Reduce heat and simmer 20
minutes or until rice is tender. Discard bay leaves. Sprinkle with parsley.
This recipe yields 6 servings.
