Spanish Sweet Onion Saute

INGREDIENTS

1 lg Spanish Sweet; peeled and cut into
; slices or chunks
3 Assorted sweet bell peppers; (red, gold, orange
; and/or green), cut
; into slices or
; chunks
1 tb Olive oil
1 Clove garlic; crushed
2 tb Fresh chopped dill; (or 1 teaspoon
; dried)
1/4 ts Salt; (optional)
1/4 ts Pepper; (optional)

INSTRUCTIONS

Saute crushed garlic and olive oil over medium heat. Add all the prepped
peppers and onions and stir-fry or saute until the vegetables begin to get
limp, but are still crunchy. (Hint: Microwave the peppers and onions on
high heat in a covered container with a little water for 2-3 minutes to
soften. Then add to skillet.) Season with salt and pepper to taste. Add
dill (fresh or dried), toss and serve as a side dish or as a topping over
hamburgers, ground steaks, regular steaks, rice or noodles. Serves 4-6 as a
side dish.
