Spanish Vegetable Stew With Squash

INGREDIENTS

3 Onions, chopped
4 Green bell peppers, chopped
4 Tomatoes, peeled & chopped
1 lb Yellow squash, chopped
2 Potatoes, cubed
5 T Olive oil
2 Garlic cloves, minced
2 T Chopped parsley
1 1/2 t Salt

INSTRUCTIONS

Heat oil & saute onions for a few minutes.  Add remaining ingredients
& a little water.  Cover & simmer for 40 minutes, stirring
