Spicy Chicken

INGREDIENTS

1 cn Black beans
1 cn Red kidney beans
1 cn Great northern beans
1 cn Baby lima beans
1 cn Whole kernel corn
3 c Salsa; thick
1 ts Ground cumin
1 ts Chili powder
Vegetable cooking spray
8 Pieces chicken breasts without skin; boneless
2 Yellow onions; thinly sliced/rings
1 Red bell pepper; seeded and sliced
1 Green bell pepper; seeded and sliced
1 Yellow bell pepper; seeded and sliced
Salt; to taste
Pepper; to taste
Parsley; chopped (optional)

INSTRUCTIONS

1. Preheat oven to 450 degrees F.
2. Rinse and drain beans and corn; place in a large mixing bowl and toss
with salsa, cumin and chili powder. Transfer to a 9x13-inch oven-to-table
casserole dish lightly coated with vegetable cooking spray.
3. Place chicken breasts on top of mixture in casserole dish and top with
onion and bell pepper rings. Salt and pepper to taste. Cover tightly with
foil. Bake at 450 degrees F for 20-25 min. until chicken is cooked through.
4. Remove foil, garnish with parsley and serve hot.
