Spicy Chilled Chi-nese Noodles

INGREDIENTS

1 lb Chinese noodles
1 1/2 T Oriental sesame oil
1 Cucumber, shredded
4 oz Baked ham, shredded
1/2 t Salt
8 oz Cooked chicken
1 Carrot, shredded
1 1/2 T Toasted sesame seeds
3 T Soy sauce
1 1/2 T Vinegar
1 t Sugar
1/2 c Chicken stock
3/4 t Tabasco
3 T Scallions, chopped
1 1/2 T Sesame oil

INSTRUCTIONS

Preparation : Bring a large kettle of water to a boil; add 1/2
tsp.salt and the noo-dles. Boil 1 1/2 minutes, until the noodles are
just done. Drain and rinse with cold water to cool. Drain well and
toss with 1 1/2 Tb. ses-ame oil. Mix the ingredients for the sauce  and
set aside. Shred the chicken, ham and vegetables. To serve, place  the
noodles on a platter. Surround with the meats and vegetables. Top  with
the sauce and sprinkle with the toasted sesame seeds.  Posted to the
