INGREDIENTS

1/4 lb Parmesan Cheese (about 2
Cups) — shredded
2 1/2 c Flour
Salt & Pepper
1/4 ts Cayenne Pepper
1/2 lb Butter — cut into pieces

INSTRUCTIONS

In food processor mix flour, 1 1/2 cups Parmesan cheese, 1 tsp salt, 1/4
tsp pepper and cayenne pepper. Add butter and pulse just until ingredients
form a dough. Shape into three logs about 1 inch in diameter. Wrap in
plastic and chill. Heat oven to 425 degrees. Cut dough into 1/4 inch slices
and put on ungreased baking sheets about 1 inch apart. Sprinkle a little of
the remaining cheese on each wafer. Bake until browned, 5 to 8 minutes.
