Spicy Tomato Salad on Toast

INGREDIENTS

12 Santa Baby Plum Tomatoes
1 ts Caster sugar
Ground black pepper; to taste
1 Red onion; peeled and sliced
Half a red chilli; finely sliced*
4 ts Lemon juice
1 ts Fresh root ginger; peeled and grated*
2 ts Light soy sauce*
1 sm Hand coriander leaves
5 Salad onions; finely sliced
100 ml Tuscan Extra Virgin Olive Oil
270 g Homebake Ciabatta; baked according to
; packet instructions

INSTRUCTIONS

1 Slice the tomatoes and gently toss in a bowl with the sugar and pepper.
2 In a separate bowl, mix together the red onion, chilli, lemon juice and
grated ginger.
3 Leave to stand for 15 minutes, then stir the two mixtures together.
4 Add the soy sauce, coriander and salad onions, and stir in half of the
extra virgin olive oil.
5 Cut the baked ciabatta bread into 12 slices, and toast. Arrange three
slices of toast on each plate, drizzle the remaining olive oil on top and
spoon on the salad.
