Spicy Tomato Spread

INGREDIENTS

Flavorful dried tomatoes; cooled
1/4 c Pine nuts; or walnuts finely
; chopped
1/4 c Dried cranberries; finely chopped
1 tb Harissa; or
1 ts Minced fresh chili
Olive oil
Crackers; or bread for
; serving

INSTRUCTIONS

1. Place the tomatoes together with the accumulated spices, in a food
processor and process until coarsely pureed.
2. Transfer to a bowl and fold in the nuts and cranberries.
3. Serve on crackers or as a dip. (To store, transfer the tomato spread to
a jar making sure there are no trapped air bubbles. Pour over a thin layer
of oil to seal the top. Cover tightly with the jar lid. The spread will
keep for up to 3 weeks in the refrigerator.)
