Spinach And Apple Salad W/bacon Dressing

INGREDIENTS

10 oz Fresh spinach, torn in bite
sized pieces
4 Bacon
1 T Vegetable oil
1 Onion, diced
2 T Cider vinegar
1 t Brown mustard
1/2 t Sugar
1/4 t Salt
1/8 t Pepper
1 Apple, cored and thinly
sliced

INSTRUCTIONS

Date: Fri, 09 Feb 1996 20:24:13 EST  From: AKSC87A@prodigy.com (MARY JO
KNAPPER)  Place spinach in large bowl. Cook bacon in large skillet over
medium  high heat until crisp. Remove to paper toweling to drain.
Discard all  but 3 Tablespoons drippings from skillet. Add oil to
drippings in  skillet and heat. Add onion; cook until tender, about 3
minutes. Stir  in vinegar, mustard, sugar, salt and pepper. Bring to
boiling. Remove  from heat. Add apple to spinach. Pour hot dressing
over spinach and  apple; toss well to coat. Crumble bacon and sprinkle
