It is the brightest star that ever cast its radiance over the darkened soul, and one that seldom sets in the gloom of morbid fancies and forboding imaginations.

Spinach and Cheese Crepes

INGREDIENTS

1/4 c Butter
1/4 c Flour
1/8 ts Pepper
1 c Half-and-half
2 pk (10-oz) frozen chopped spinach, cooked
1 c Grated Swiss cheese

INSTRUCTIONS

Someone was looking for Crepe fillings? I found this one in my recipe file.
It is untried. I got it from the Five Roses Flour Recipe Cooking
Collection.
In a med. saucepan melt 1/4 cup butter over low heat. Stir in 1/4 cup flour
and 1/8 tsp pepper. Gradually stir in 1 cup half-and-half. cook over
moderate heat, stirring, until thickened. Add two 10-oz packages frozen
chopped spinach, cooked, and 1 cup grated Swiss cheese. Cook, stirring,
until cheese melts. Spoon mixture onto crepes, and roll up. Place in
greased baking dish; broil 5 minutes. Posted to TNT - Prodigy's Recipe
