Spinach And Pasta

INGREDIENTS

Your favorite pasta, cooked
as directed
Your favorite Italian sauce
Bottled or homemade
Spinach, cooked and drained
Mozzarella cheese, shredded
Fresh Parmesan cheese
grated

INSTRUCTIONS

Make your favorite spaghetti/lasagne/pasta sauce. When I go all out,  I
put chopped onions, chopped green pepper, sliced fresh mushrooms,
fresh garlic, fresh parsley or parsley flakes, and some sauteed
Italian sausage in my tomato-based sauce. If I don't have time, I use
my favorite bottled sauce.  Cook and drain your favorite pasta. I have
used many kinds for this,  usually whatever I have on hand.  You may
use fresh or frozen spinach, chopped or leaf. I prefer fresh  leaf
spinach, but let time be your guide. Cook the spinach in a  Corning
ware dish in the microwave.  To assemble: Place a generous serving of
pasta on a microwave-proof  plate. Next, put on the spinach. Then some
shredded mozzarella  cheese. Ladle sauce over all. Cover with waxed
paper and microwave  until cheese is melted. Uncover and sprinkle with
fresh Parmesan.  Serve with a green salad, garlic bread and red wine.
