Spinach-Artichoke Quiche

INGREDIENTS

6 Eggs
3 c Milk
Nutmeg
White pepper and– salt to taste
1 cn Artichoke hearts; chopped in small pieces (14 ounce)
1 c Spinach; finely chopped
1 c Parmesan cheese; freshly grated
2 Pre-baked 8" pie shells

INSTRUCTIONS

CUSTARD MIX
QUICHE
To make the custard, mix the ingredients together. Place spinach, artichoke
hearts and cheese into pie shells. Add the custard mixture. Place in a 375
degree oven and bake 45 minutes to one hour until the custard is set and a
toothpick inserted comes out clean. If using processed Parmesan cheese, use
less salt in the custard mix. If using frozen spinach, squeeze out water
after defrosting.
