INGREDIENTS

2 pk (10 oz each) frozen chopped spinach
1 Envelope onion soup mix
1/2 c Fat-free sour cream
1/2 c Light sour cream
2 oz (1/2 c)shredded low-fat sharp cheddar cheese

INSTRUCTIONS

Spray 2-qt baking dish with vegetable oil spray. Preheat oven to 350F. Cook
spinach according to package directions; drain well. In large bowl, mix
spinach with soup mix and sour cream.
Spoon into prepared baking dish and top with cheddar. Bake, uncovered, at
350 degrees for 30 minutes. Makes 6 servings

Sweet Potato Pancakes with Apple Walnut Topping Ohio Farmer Mid-March 1999
6 c. shredded peeled sweet potatoes (yams) 1/4 c. all-purpose flour
1/2    tsp. baking powder
1/8    tsp. cinnamon 1 T. honey 1 egg 2 egg whites Apple Walnut Topping
(recipe follows)
In a bowl, combine the shredded sweet potatoes, flour, baking powder,
cinnamon, honey, egg, and egg whites with a fork until well blended. Heat a
non-stick skillet coated with non-stick cooking spray and drop about 2 T.
(about 3 inches each) into hot pan. Flatten slightly with the spatula and
cook pancakes over medium heat until golden on both oven and continue
cooking until all pancakes are cooked. Serve with Apple Walnut Topping.
Apple Walnut Topping: 1/2 c. light brown sugar 1/2 c. chopped walnuts 2
apples, cored and chopped 1 T. orange juice
1/8    tsp. cinnamon
In a skillet add all the ingredients and cook over medium high heat,
stirring, until the apples are just tender and the brown sugar is melted to
form a syrup. This is also great over ice cream.
MAKES about 18 sweet potato pancakes
