INGREDIENTS

1/2 pk Frozen puff pastry
1 pk Frozen chopped spinach; (10oz)
1 c Whipping cream
3 Eggs; beaten lightly
1/2 ts Pepper
1/4 ts Salt
1 1/2 c Shredded mozzarella cheese
1/2 c Shredded Cheddar cheese
1/2 c Onion
1 Jar roasted red peppers; drained and chopped
; (8 oz)

INSTRUCTIONS

Unfold pastry sheet onto lightly floured surface and roll into a 13-inch
square. Place in lightly greased deep dish 9-inch pie plate. Fold edges
under and crimp. Prick pastry with fork. Freeze 15 minutes. Bake at 400
degrees for 12 minutes. Cool on wire rack. Reduce oven to 350 degrees. Cook
spinach according to package directions. Squeeze between paper towels to
remove excess moisture. Combine spinach with eggs, cream, pepper and salt.
Sprinkle cheeses and onion into pastry shell. Add spinach mixture. Top with
red pepper. Bake, uncovered, at 350 degrees for 55 minutes or until set.
Remove from heat. Cover with aluminum foil and let stand 30 minutes before
serving.
