Spinach Salad with Hot Bacon Dressing

INGREDIENTS

5 sl Lean bacon; chopped fine
2 tb Minced shallot
1/2 c Cider vinegar
1/2 ts Sugar
1 ts Dijon mustard
1 tb Olive oil
Salt; to taste
Freshly-ground black pepper; to taste
1 lb Fresh young spinach; coarse stems
Discarded; leaves washed well,
; spun dry

INSTRUCTIONS

In a large skillet, cook bacon over moderate heat, turning it, until it is
crisp, transfer it to paper towel-lined plate to drain, and discard all but
2 tablespoons of the fat. In the remaining fat, cook the shallot for 1
minute. Add the vinegar, sugar, mustard, oil, and salt and pepper to taste.
Bring to a boil, pour over spinach and toss. Serve sprinkled with the
bacon. This recipe yields 4 servings.
