Spinach Tossed with Lime and Chiles

INGREDIENTS

2 tb Peanut oil
1 1/2 lb Spinach
1 tb (or 1 lb; depending) pepper flakes
1 ts Sugar
1 ts (i'd go for a Tbsp myself) garlic; minced
1/4 c Lime juice

INSTRUCTIONS

Heat oil til smoking-hot.  Add spinach and stir until wilted ('bout a
min.). Add the rest of the stuff and toss in pan/wok 30 second. serve
immediately thereafter.
As an aside, i'd recommend this served over a bed of cold Basmati, or even
Jasmine rice- garnish w/ mint.
