INSTRUCTIONS
Beat 4 eggs until very light (should be the consistency of cake batter).
Add 2 cups of sugar gradually and beat until creamy, about 15 min. with a
electric mixer (5 min. with a Kitchen Aid). Add 4 cups of sifted flour and
1 tsp. of baking powder. Stir in 1/2 tsp oil of anise ( or 1 to 1-1/2 tsp.
anise extract).
Roll out 1/2 inch thick on lightly floured board. Press with well-floured
springerle pin or board and separate into squares. Allow cookies to dry
out overnight (or at least 8 hours).
Bake on a lightly greased cookie sheet at 300 degrees until bottoms are
straw-colored (about 15 min.)
