Squid Adriatic

INGREDIENTS

2 lb Squid, cleaned
3/4 c Olive oil
1 Sprig parsley, chopped
1 Onion, chopped
1 Garlic clove, minced
1 ts Dried basil
1/2 c Red wine
16 oz Tomatoes, crushed

INSTRUCTIONS

Wash squid thoroughly. Cut into 1/2" rings or pieces about 1" square. saute
squid in hot oil for 1 minutes. Add parsley, onions, garlic, and basil.
Cook for about 5 minutes. Add wine. Civer and simmer for 5 more minutes.
Add tomatoes and cook for 1/2 hour or until squid is tender. Add more water
as needed, while cooking.
