Standard Chutney Recipe

INGREDIENTS

5 c Seedless raisins; chopped
6 c Green apples; chopped – or
Pears
2 2/3 c Onions; minced
2/3 c Salt
5 lb Red tomatoes; peeled and
Diced
3 lb Brown sugar
2 1/2 pt Cider vinegar
1/4 lb Ginger; minced
1/2 lb White mustard seed
Cayenne pepper to taste

INSTRUCTIONS

Cook all together slowly in a gigantic kettle (or in batches) for 3 hr
until thick. Put up in jars in the standard way, using a hot water bath.
:makes 1 gallon or so
