Standing Rib Roast W/cumberland Sauce

INGREDIENTS

7 lb Rib Roast
2 tb Oil
1 tb Black Pepper, Ground
Cumberland Sauce

INSTRUCTIONS

Preheat the oven to 450 degrees. Rub the roast with the oil. Rub on the
pepper. Roast for 30 minutes. Reduce oven temperature to 325 degrees. Roast
until a meat thermometer inserted in the thickest part of the meat (but not
touching a bone) reads 130 degrees (about 1 1/4 hours) for medium rare.
Allow to stand for 15 minutes before carving. Serve with Cumberland Sauce
