INGREDIENTS

175 g Self raising flour
150 g Butter; softened
150 g Caster sugar
1/4 ts Baking powder
1 Lemon; zest of
60 g Blueberries
60 g Strawberries; diced
60 g Blackberries
1 Apple; diced
2 Eggs; beaten
2 tb Honey
60 g Raspberries
Butter for greasing

INSTRUCTIONS

Grease the pudding moulds with a little butter and dust with a little
flour.
Skin, core and dice the apple fine. Mix with the berries and the honey, put
into bottom of basin bowl (11/2 inches deep).
Cream together the butter and the sugar and gradually add the eggs a little
at a time, beating well. Fold in the flour with the lemon zest.
Place the mix into the bag and pipe out the mix on to the prepared moulds
until 3/4 full.
Flat out with a wet hand and cover with foil. Steam for approximately 45
minutes.
