Steamed Spinach and Leeks

INGREDIENTS

1 ts Olive Oil
2 Leeks, Green & White Parts, Thinly Sliced
1 ts Fresh Lemon Juice
1 lb Fresh Spinach, (Abt 3 Bunches), Stems Removed
1/4 ts Salt
1/8 ts Freshly Ground Pepper
1 ts Finely Grated Lemon Zest
1 ts Sherry Vinegar

INSTRUCTIONS

Adapted from Healthy Side Dishes
In heavy saucepan, over med heat, warm olive oil. Add leeks and saute 4 - 5
min, stirring occasionally, until leeks are softened and translucent. Add
lemon juice and spinach leaves. Reduce heat, cover and cook 4 min without
removing lid. Uncover and toss to mix well. Add salt, pepper, lemon zest
and vinegar and cook, stirring, 1 min longer. Transfer vegetables to
serving dish.
Servings: 4 Prep Time: About 10 min Cooking Time: About 12 min.
