INGREDIENTS

4 Ahi tuna steaks; (7oz.)
1 oz Black sesame seeds; toasted
1 oz White sesame seeds; toasted
1 oz Corn oil
Mixed greens
2 c White wine
1 Shallot
1 oz Heavy cream
1/2 lb Unsalted butter
1 ts Grated ginger
3 tb Soy sauce
1 ts Sesame oil
3 tb Olive oil
1 tb Rice wine vinegar

INSTRUCTIONS

TUNA
SAUCE
VINAIGRETTE
Season Ahi and coat with sesame seeds.
Saut. wine and shallots. Once wine is reduced, add cream and butter.
Blend ginger, soy sauce, sesame oil, olive oil and rice wine vinegar in a
blender.
In a separate saut. pan, heat corn oil. Place tuna in pan and cook on both
sides for about 2 minutes.
Add vinaigrette and sauce. Spoon over tuna.
Place Ahi tuna steaks on a bed of mesclun salad.
