Stir-fried Pork And Cucumbers

INGREDIENTS

1/2 lb Lean pork
1 T Soy sauce
2 Cucumbers
2 T Oil
1/4 t Salt
3 Sesame oil, more or less

INSTRUCTIONS

Slice pork thin against the grain. Add soy sauce to pork and toss.
Slice cucumbers thin, but do not peel. Heat oil. Add pork and  stir-fry
until it begins to brown (about 3 minutes). Add cucumbers  and salt;
stir-fry 1 to 2 minutes. Then cook, covered, over medium  heat until
done (about 1 to 2 minutes more). Sprinkle with sesame oil  and serve
at once.  VARIATION: Use 1 cucumber and 1/2 cup bamboo shoots, sliced
