Stir-fried Quorn With Chinese Blackbeans And Spring Onion

INGREDIENTS

2 T Vegetable oil
1 Red onion, sliced
1 Red pepper, sliced
1 Garlic clove, crushed
1 Fresh chilli, finely sliced
optional
1 Quorn pieces, 300g
1 Spring onions, cut into 1
1/2 inch
lengths
2 T Prepared Chinese black bean
sauce
1 T Dry sherry
1 t Sugar
1 t Cornflour
8 T Water

INSTRUCTIONS

Heat the oil in a large wok or frying pan over high heat. Add the red
onion, and pepper and stir fry for 1 minute.  Now add the garlic,
chilli and Quorn pieces and cook for a further 3-4  minutes until the
Quorn pieces have taken a light golden colour.  Add the spring onions
and cook for 1 minute more.  Add the sauce ingredients, allow it to
come to the boil and thicken  slightly.  Serve immediately on rice or
