Stir-Fried Spinach, Shanghai Style

INGREDIENTS

1 lb Spinach
10 ts Vegetable Oil
4 1/2 ts Soy Sauce
2 ts Salt; or to taste
1 1/2 ts Sugar

INSTRUCTIONS

1. Trim the spinach and wash well to remove all sand.
2. Heat 7 tsp of the oil in a wok until the oil surface ripples. Add the
spinach and stir-fry for 1 minute, or until it just starts to wilt. Add the
soy sauce, sugar and MSG. Stir in, then add the remaining 3 tsp of oil.
Stir, remove, and serve.
