Stir-Fry Chicken with Pineapple

INGREDIENTS

500 g Chicken breast
1 Pineapple; ripe
1 4 inch piece ginger
2 Cloves garlic
5 Stalks coriander
1 Chilli
5 Spring onions
1 ts Sugar
1 ts Pepper
2 tb Soya sauce
2 tb Fish sauce
2 tb Oil

INSTRUCTIONS

Remove the skin of the pineapple and cut into cubes and place in a bowl.
Cut the chicken into slices across the grain. Slice the ginger and the
chilli into match sticks.
Chop the garlic and slice the spring onion.
Heat the oil in a wok and add the ginger, garlic and chicken. Stir for 2
minutes and add the pineapple. Continue to stir for eight minutes adding
the soy sauce, fish sauce, sugar, pepper and chilli. Remove and garnish
with spring onion and coriander.
