Stuffed Peppers With Anari And Feta Cheese

INGREDIENTS

3 Mixed peppers
3 Egg yolks
175 g Feta cheese, 6oz
275 g Anari cheese/cottage cheese
9 1/2oz
1/2 t Dried mint
1/4 t Ground black pepper
7 Fat, 0 Other Carbohydrates

INSTRUCTIONS

Preheat the oven to 190øC/375øF/gas mark 5  Cut the peppers in half
lengthways and remove the seeds and core.  Place the two cheeses and
egg yolks in a medium bowl and mix until  blended together. Stir in the
dried mint and black pepper. Spoon the  cheese mixture into the pepper
halves. Place on a baking sheet in the  oven for 10-12 minutes unti
golden brown and bubbling.  Serve warm or at room temperature with a
