Summer Squash

INGREDIENTS

3 md Yellow squash; (up to 4)
1/2 pk Smoked sausage; polska kielbasa or favorite choice
1 lg Onion
2 tb Butter or margarine
2 c Shredded cheese; (optional)

INSTRUCTIONS

Slice onion and smoked meat, put in large skillet with butter. Saute until
onion is tender and meat is browned. While meat and onions are cooking
slice squash in about 1/4 inch slices. Add squash and toss to mix all
ingrediants. Salt and pepper can be added now. Cajun seasoning is very good
in this also. Turn the heat down to simmer, put a lid on and simmer for
about 10 minutes until the squash is tender. If desired, sprinkle cheese on
and let melt. This is good as a main item or a side dish.
