375 g Smoked mackerel fillet
skinned and flaked
12oz
2 Pink grapefruit, peeled and
segmented
Lollo biondo lettuce leaves
1 Watercress
4 Salad onions, finely chopped
1 Red pepper, diced
2 T Light olive oil
1 T White wine vinegar
1 T Freshly chopped parsley
Salt and freshly ground
black pepper

INSTRUCTIONS

Arrange the smoked mackerel and grapefruit on a bed of lollo biondo
and watercress.  Sprinkle over the salad onions and pepper.  Blend the
dressing ingredients together and spoon over just before  serving.
