Suppertime Strudel

INGREDIENTS

8 Sheets phyllo dough; thawed if frozen
Butter flavor cooking spray
2 ts Confectioners' sugar
1/2 ts Cinnamon
2 tb Slivered almonds
2 md Yellow onions; thinly sliced, (about 2c)
2 Cloves garlic; minced
1/2 c Chicken broth
1 c Refrigerated egg substitute
2 c Shredded cooked chicken

INSTRUCTIONS

FILLING
Recipe from "Healthy Meals in Minutes".
Preheat oven to 350. To prepare filling, spray a large nonstick skillet
with cooking spray. Heat skillet over medium heat. Add onions and garlic.
Cook, stirring, until tender, about 5 minutes. Stir egg substitute into
skillet. Cook, stirring, until ser-about 5 minutes. Stir in chicken. Unfold
sheets of phyllo so they lie flat. Cover sheets with plastic wrap and a
damp towel. Place 1 phyllo sheet on a baking sheet. Spray with some cooking
spray. Layer with remaining phyllo sheets and more cooking spray. Spread
filling down center, leaving a 2-inch border. Fold ends over filling; roll
up jelly-roll style. Place strudel seam-side down on baking sheet. Bake
until golden, about 30 minutes. Sprinkle with confectioners' sugar and
cinnamon. Top with almonds.
