Sweet-and-sour Chicken Soup

INGREDIENTS

6 c Lowfat chicken stock
2 T Rice vinegar
2 T Low sodium soy sauce
1 t Peeled fresh ginger, minced
1/2 t Bottled minced garlic
1/2 t Salt
1/8 t Ground white pepper
1 3.5 oz pkg shittake
mushrooms stems removed
thinly
Liced
Sliced
2 c Shredded cooked chicken
2 c Spinach leaves, thinly
sliced
1 1/2 oz Somen or angel hair pasta
uncooked

INSTRUCTIONS

Combine first 8 ingredients in a large Dutch oven; bring to a boil.
Cover, reduce heat, and simmer 30 minutes. Stir in chicken, spinach,
and noodles; cook 5 minutes.  Recipe by: Cooking Light - April 1997
