Sweet Napa Cabbage With Pasta

INGREDIENTS

8 oz Fresh angel hair pasta
cooked
2 T Vegetable oil
1 Onion, sliced thin
2 Chinese eggplants, sliced
thin
1/2 Head Napa cabbage, shredded
2 Tomatoes, diced
1 T Herbes de Provence

INSTRUCTIONS

In a non-stick frying pan or a wok, heat oil until smoking. Add the
onions and cook until softened, about 4 minutes. Add eggplant and  cook
for 4 more minutes. Add the cabbage, tomatoes and Herbes de  Provence
and simmer for 5 minutes. Toss with angel hair pasta and  season to
