INGREDIENTS

2 tb Butter
1 lb Sweet onions; thinly sliced, up
; to 1 1/4
3/4 c Sour cream
2 Eggs; beaten
3/4 ts Salt
1/4 ts Black pepper
1 1/2 c Shredded three-cheese blend; divided (6 ounces)
One 9-inch unbaked pie shell

INSTRUCTIONS

Preheat the oven to 400 degrees. In a large skillet, melt the butter and
cook the sliced onions over medium-high heat for 15 minutes, stirring
frequently until tender and just slightly golden. Remove from the heat and
drain any excess liquid. Place in a medium-sized bowl and add the sour
cream, eggs, salt, pepper, and 1 cup of the cheese blend; mix well. Pour
into the unbaked pie shell and bake for 30 minutes, then remove from the
oven and sprinkle the remaining 1/2 cup cheese over the top. Allow to stand
for 15 to 20 minutes, or until the cheese melts and the custard firms up.
NOTE: If desired, add 1/4 teaspoon ground nutmeg to the sour cream mixture.
