Sweet Potato Oven Fries

INGREDIENTS

2 md Sweet potatoes – (1 1/4 to 1 1/2 lbs); scrubbed
Nonstick vegetable oil spray
Salt; to taste
=== SEASONING MIX ===
2 tb Finely-chopped flat leaf parsley
1 ts Minced garlic
1 ts Freshly-grated lemon zest
Freshly-ground black pepper; to taste

INSTRUCTIONS

Preheat the oven to 400 degrees. Cut the potatoes crosswise, 1/4-inch
thick. Spray a baking sheet with the nonstick vegetable oil spray and
arrange the potatoes in one layer. Bake them in the preheated oven for 15
minutes, turn them over, and bake them for an additional 10 minutes or
until just golden. Sprinkle them with the seasoning mix and serve. To make
the seasoning mix, in a bowl, stir together the parsley, garlic, lemon
zest, pepper and salt to taste. This recipe yields 4 servings.
