Sweet Potato Puff

INGREDIENTS

3 c Fresh, cooked sweet
potatoes
4 Egg whites
1/4 c Sugar
1 t Vanilla
2 T Flour
3 T Flour
1/2 c Brown sugar
2 T Butter
1/2 c Chopped Pecans

INSTRUCTIONS

Source: Deana Hannah, Tennessee 1. Preheat Oven to 350 degrees  2.
Apply vegetable oil cooking spray to 1-1/2 qt. casserole dish.  3.
Using a food processor or mixer, smooth together all sweet potato
mixture ingredients and pour into dish.  4. To make topping, crumble
flour, brown sugar, and butter in small  bowl, stir in pecans. Sprinkle
over sweet potato mixture.  5. Bake for 30 minutes or until golden
