Sweet Potato Stars

INGREDIENTS

4 lg Sweet potatoes or yams; at least 3 inches in diameter
2 tb Toasted sesame oil
1 c Freshly squeezed orange juice
5 1/2 tb Brown sugar
1/2 ts Ground nutmeg

INSTRUCTIONS

Preheat the oven to 350 degrees. Place each sweet potato or yam on its side
and slice crosswise into 1/2inch rounds. Using a 3inch starshaped cookie
cutter, cut out a star shape from each round; discard the scraps. If your
star cookie cutter is packed away with the Christmas decorations, place a
paper star stencil on top of the round and use a paring knife to cut the
shape Pour the sesame oil into the bottom of a shallow ovenproof baking
dish and spread it so that the whole bottom is greased. Place the stars in
the baking dish. Pour the orange juice over the stars and sprinkle the
brown sugar and nutmeg on top. Cover tightly with aluminum foil. Bake for
30 minutes, then remove the foil and bake for 15 more minutes. Use a
spatula to remove the stars from the baking dish. Top each star with 1
teaspoon of the pan juice. Yield: 6 servings CHEF DU JOUR BOB BLUMER SHOW
