Swordfish on the Grill

INGREDIENTS

4 Swordfish steaks; 1-inch thick
4 Cloves slivered garlic
4 tb Olive oil
1/2 Lime; juiced
1 1/2 tb Soy sauce
1 Green onion; thinly sliced
1/2 Ripe mango; chopped and drained
1/4 Red onion; chopped
1 ts Fresh minced parsley
1/4 Red or green sweet pepper; chopped
1 Lime; juice of
1 pn Salt

Lightly score the swordfish, rub it with garlic, leaving garlic on the
fish. Marinate the fish in the remaining ingredients for 2 to 3 hours at
room temperature. Grill over medium coals for 5 minutes a side until medium
rare, grill longer for well done. Serve with Fruit Salsa.
Fruit Salsa: Fruit salsa brings out all the wonderful flavors of summer.
This is a great garnish and flavor builder for grilled fish or chicken.
Serves 2 to 4 as a garnish depending on the portions used.  Mix all
ingredients together and chill at least one hour before serving.
