Tagliatelle With Sun-dried Tomato And Vegetable Sauce

INGREDIENTS

2 T Olive oil
4 Shallots or small onions
finely chopped
2 Courgettes, finely diced
1 Yellow pepper, de-seeded and
finely diced
2 Tubs sun-dried tomato sauce
8 Pitted black olives, sliced
1 lb Bag fresh garlic and herb
tagliatelle
10 Fresh basil leaves, torn
Salt and freshly ground
black pepper
1 Sprig fresh basil to garnish

INSTRUCTIONS

Heat the oil in a large pan and fry the shallots or onions for 5
minutes. Add the courgettes and pepper and cook for a further 5
minutes. Add the sun-dried tomato sauce and olives. Meanwhile, cook
the pasta following instructions on the pack. Drain the pasta quickly
then add to the tomato mixture with the fresh basil leaves and
seasoning to taste. Transfer to a warmed serving dish, garnish with
sprigs of basil and serve immediately. Converted by MC_Buster.  NOTES :
This easy to make pasta dish combines traditional Italian  ingredients
to make a delicious supper or lunch. Serve with warm  ciabatta or
