Tarakihi With Lemon And Caper Dressing

INGREDIENTS

75 Olive oil, 5tbsp
1/2 Lemon, juice of
Finely grated zest of 1
lemon
Salt & freshly ground black
pepper
30 Capers, drained and roughly
chopped 2tbsp
30 Garlic chives, chopped
2tbsp
4 Tarakihi steaks, each
weighing
approximately 175g
6oz
Butter for frying

INSTRUCTIONS

Whisk oil into lemon juice. Add lemon zest, seasoning, capers and
chives.  Season fish and pan-fry in butter for 3-4 minutes each side or
until  thoroughly cooked.  Remove from pan and keep warm.  Warm the
lemon dressing in the frying pan and pour over the fish.  Serve with
