Taro Root And Garlic Chive Latka

INGREDIENTS

1 lb Taro root
2 T Chopped garlic chives
1 T Chopped ginger
1 Egg white
1 T Cornstarch
2 T Olive oil
2 T Salmon roe
1 T Sour cream
16 Chive points for garnish
Salt and pepper

INSTRUCTIONS

Peel taro root and grate over large holes of cheese grater. In a
mixing bowl place shredded taro root, garlic ves, ginger, egg white
and corn starch. Mix and season to taste with salt and pepper. In a
large skillet over medium heat, heat the olive oil and sear 1
tablespoon of taro mix, flatten as a pancake. Cook each side until
golden brown. Drain excess oil on a paper towel. Serve topped with  mon
roe, sour cream and chive points. Yield: 4 servings  Recipe by: CHEF DU
