Texas Meatloaf

INGREDIENTS

MAZOLA No Stick corn oil
Cooking spray
2 tb MAZOLA corn oil
1 Green pepper coarsely
Chopped
1 lg Onion, chopped
3 Cloves garlic, minced
1 1/2 lb Lean ground beef*
2 Egg whites
3/4 c Old-fashioned oats
3/4 c Barbecue sauce, divided
1 cn (4 oz) chopped green
Chilies, undrained

INSTRUCTIONS

1. Spray 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with cooking spray.
2. In large skillet heat corn oil over medium-high heat.  Add green pepper,
onion and garlic; stirring frequently, cook 4 minutes or until tender.
Remove
from heat.
3. In large bowl combine ground beef, egg whites, oats, 1/2 cup barbecue
sauce
and chilies.  Stir in cooked vegetables.  Spoon into loaf pan.
4. Bake in 350 F oven for 1 hour.  Drain excess liquid.
5. Invert loaf onto serving platter.  Spoon remaining 1/4 cup barbecue
sauce
over top.  Let stand 10 minutes before slicing.
Makes 8 servings.
* Use ground round or 90 percent lean ground beef
