INGREDIENTS

2 tb Olive oil
1 Red onion; thinly sliced
1 Sweet red bell pepper
1 Rib bed and cut into 2×2 inch strips.
1/2 c Frozen corn kernels
1 md Size clove garlic; finely chopped
1 tb Lime juice
2 ts Chili powder
1 ds Dried cilantro
1/2 c Canned black beans
Salt and freshly ground pepper to taste

INSTRUCTIONS

In a medium frying pan over medium high heat, cook the onion in the olive
oil for 1 minute. Add the bell pepper, corn, garlic, lime juice, chili
powder, cilantro, salt and pepper. Stir and cook Until vegetables are
crisp-tender. Stir in 1/2 cup canned black beans. Stir until hot. Serve
warm.
Approximately 7 minutes.

from fat); 5g Protein; 34g Carbohydrate; 0mg Cholesterol; 57mg Sodium
