Thai Turkey Roll-Up

INGREDIENTS

1/2 lb Roasted turkey breast; cut into 1/4-inch strips
1 Soft lavosh loaf *
1/4 ts Red pepper flakes
1 ts Garlic; minced
1 ts Fresh ginger root; minced
1 tb Brown sugar
1 tb Minced cilantro
2 tb Crunchy peanut butter
2 tb Green onion; minced
2 tb Reduced-sodium soy sauce
1 Lime; (juice with pulp)
1/2 ts Lime rind; grated

INSTRUCTIONS

1.In medium bowl, combine lime juice, soy sauce, green onions, cilantro,
peanut butter, brown sugar, ginger root, garlic, lime rind, pepper flakes
and turkey strips. Cover and refrigerate for at least 1 hour.
2.Unfold lavosh; drain turkey mixture, if necessary, and spread evenly
along lower quarter of bread.
3.Roll up tightly and cut into four equal portions.
* Lavosh is a round, thin bread that comes in both soft and crisp versions;
it's available in Middle Eastern markets and in most supermarkets.
